WELL done to all the participating studs in last weekend’s ITM Irish Stallion Trail.

Everywhere we went there were sandwiches, sausage rolls, soup, chocolate biscuits, fizzy drinks and never-ending cups of tea and coffee.

Peter Grimes of Rumbles fame was on duty at Kildangan Stud. The beef rolls were very popular there along with the southern fried chicken wraps.

Ballylinch Stud always pushes the boat out and we discovered that manager John O’Connor has his very own Mary Berry on the team in the form of Kayleigh Brady.

The Co Louth native, who has been covering maternity leave, is a highly skilled baker and whipped up a few batches of her very tasty cupcakes for the hundreds who attended.

They got rave reviews from this parish and we think Kayleigh would give the team at Avoca a run for their money.
